I make lots of cutting boards. Prefer to make end-grain boards, so the knife doesn't mark up the board so badly. I glue up boards like you do, then cut them in 7/8" strips, rotate them 90 degrees, and glue them up together again. Makes an interesting pattern. If the strips for the boards are not symmetrical, you can flip every other piece and get sort of random pattern that is also attractive. Your boards look nice.
