So we have a loft full of shorts and odd pieces that came from a woodshop that closed. They've been here for ages.

Today I was perusing the pile to find some pieces to do a shift knob. Selected two, one I believe is mahogany the other I thought was walnut. However the darker of the two "walnut" smells extremely strong at first I thought it was like a Vick's smell but the more I turned the more it smells like manure. It's awful but it sure is pretty any thoughts?

The lighter one looks like mahogany. I have turned a couple of pens with 80 year old mahogany that I have a small supply of. Looking to make a gear shift knob for my 28 Ford Roadster with it. Not sure of a wood smelling that bad.
 
Most trees can develop a hollow spot (that squirrels and other animals live in) and the lower end will fill with water and unable to drain out. Talk about sour smelling, it does, and with many different kinds of trees. Oak was very prevalent for doing this, but many species would. And it often stains the wood to make it look a different color for inches - than the normal wood color would be.

That could be a lot of different woods. I'm looking at four different species in my shop that are close enough to be it. ID'ing wood can be tough.
 
I could be way off but I'm not seeing Walnut. This looks like some kind of Rosewood to me, but again, I could be way off. I know I did some Rosewood, forget what Species, and man did it stink. I've never turned it since and threw the piece away that was left over.
 
I don't see walnut either. The dark lines aren't like walnut, but I don't have a clue. There are a lot of South American woods that look very similar to this, a magnifying glass and some research could be the only way to know.
