Greetings from Nebraska.

Next week's allowance will go back to pen kits and supplies, but last week's went to homebrewing.

I just put a German Hefeweizen in my 5 gallon conical 45 minutes ago and it has started actively fermenting already - woo hoo!

Bavarian Wheat malt extract
Northern Brewer Hops
Hallertau Hops
CellarScience Clearzyme Clarifier (although I usually don't use clarifiers on my wheat beer)
Fermentis SafAle WB-06 Yeast

Now it's time to anxiously wait.

I like my beer but that would be a year's supply for this old fart. How long is the wait for bottling or kegging?

When we first moved so SD, I asked for the darkest beer in the house. Response was "not sure if that will be Bud or Coors Lite"
Next place was much better. At least I can get an Alaska Amber which is acceptable.

Found a store in Sioux Falls that sometimes has my favorite Moose Drool - brown ale BigSky brewing Missoula, MT

It usually goes through fermentation and clarifying within 3 weeks. I haven't decided what to do with this batch yet. I will probably fill up a 2.5 gallon keg to force carbonate and bottle condition the rest.

I'm fortunate that there is a microbrew here in Columbus. They have about 5 flagship beers and usually another 5 limited time or one-off brews. There is also one in Seward, NE near where my oldest son lives so I pick up a crowler or two from them once in a while.

Thankfully, I live in the PNW. You can throw a rock from your front door and hit a microbrewery up here lol

If you ever get to Las Vegas the Main Street Station Casino Brewery Hotel has an excellent dark beer called 'Black Chip'...
 
I would love to brew an Irish Stout like Guinness style, but I'm just not set up for the Nitrogen/CO2 gas mix that it needs. I would also need to get a stout/creamer faucet. So at home I will just stick with Irish Red's and English Browns and leave the Stout's to visits to the pub. - Dave
 
Wish you lived closer to Fort Worth. I've got a bunch of stuff I used to make wine for a while pre-lathe (I'm better at pens. Always made drinkable wine but couldn't ever perfect shareable wine). I'd give it to you to get it out of the storage room. Your setup looks great.
