You have several terms that you may find.
S2S is surfaced two sides. Meaning one face is jointed flat, then the opposite face is planed flat.
S3S is surfaced 3 sides. Same as above, but one edge has be Straight line ripped (most likely what you are describing). So you have only one edge that isn't straight/square to the others.
S4S is fully dressed on all four sides.
