so hypothetically speaking, if one were to be able to get a 2.5gal or 5gal paint pot for the same price, is there any reason not to go with the larger one?

Max pressures equal and enough space to store it....I would get the larger one.

I have never seen a need for a bigger one. The bigger one will take longer to get to pressure or to get to vacuum which could be a problem if you do not have a big enough compressor/vacuum pump.
