Making pepper grinders out of........?

I have a bunch of Cocobolo and I would like to make at least one or maybe two grinders out of. My concern is allergic reactions some people have to the wood. I'm not worried about the outside, it will be coated in poly (enduro). But the inside on most grinders are not. I'm also concerned about the oil the it produces. Should I be concerned? Or?

Seal the inside. Pour in your Poly(enduro) and pour out the excess. Repeat a few times.

Although I would use some food-grade sealer rather than poly.

Or, Drill/turn the in side slightly oversize and fill with a "safe" wood then turn that for the pepper mill. You will only see the "safe" wood from the bottom.

Given that some people are VERY allergic to Cocobolo, I'd definitely finish it somehow. I think most pepper mills aren't finished inside because they're mass-produced, and it takes extra time and money to do so...

Someone told me that almost all clear finishes are non-toxic once they're cured...(Almost all)..but I don't have any proof of that...

I'm facing a similar problem. I have a peppermill kit I bought, but haven't made it yet since I'm not extremely wood-savvy at this point as far as toxicity and such goes. Does anyone have a link handy to a good reference of food safe woods?

BTW, I think I remember seeing a similar thread on here at one time that mentioned plastic liners for mills. Any info on those? Do these come with certain kits (that I haven't found) or is this a "repurposing" of something else for this use? Thanks!
