Plum splits alot and pretty quickly, even when waxed. If you are planning on turning bowls I'd turn then soon, leave 1" thick and wax them and wait for 6-12 months depending on blank size. You also turn green to thin wall finish and expect alot of movement ( which can be nice depending on what you are going for) If using for pen blanks I would cut into 1 1/4" thick slabs and let dry.
