Seeing this type of pattern in a ton of the vintage pens...how'd they do this?

Looks to be celluloid. Best way to tell is to rub it with your fingers until warm then smell it to see if you can smell camphor. The stuff is pretty flammable and is no longer made in the us. You can get blocks of it made in China, but it is pretty difficult to work with and requires light cuts and VERY sharp tools. Tends to melt when drilled so requires lubricant.
 
Here's one I made a few years ago. Very time consuming and in the other direction, but basically a glue up of alternating cast black and pearlex pr thin slices.
