I would recommend CA to prevent chipping of the beans and to fill the voids. Downside is that you lose the coffee aroma.

The last one I did I:

1. turned down almost to finished diameter
2. filled voids with finely-ground coffee, and glue in place with thin CA
3. turn away excess and repeat if necessary, then light finishing cuts to final diameter
4. sand with 240, 320, 400, 600, micromesh
5. usual finish of 8-10 coats of thin CA. If any depressions appear during CA application, use medium CA to fill.
6. buff out the finish with micromesh and plastic polish

I do exactly what turbowagon does. They key is to use thin CA first. The thin wicks into the pores of the beans so that when you do your final cuts, you don't get as much tear out. There will be natural voids near the centers of the beans so you will need to fill those with medium or thick unless you like the more natural look of the bean.
 
For me, adding a light coat of thin CA every few passes during the actual turning of the blank helped tremendously. Like Warren says, it wicks into the beans and keeps them from tearing out. And yes, I use a CA finish over the final pen as protection.
