I have several different hardwood pieces including birdseye and regular maplewoods, they are pretty solid. Do they need to be stabilized? Obviously I'm a newbie at this. Any input would be nice.

Maple and other hardwoods do not typically need to be stabilized unless they are heavily spalted or otherwise soft. I will go ahead and stabilize some pieces of burl. It helps tame the grain and keeps them from blowing apart when turning.
