I think the best fish skin pen that I ever saw was the one done by Curtis (Mesquite man) when he did this gar fish skin and tail combo.

The problem with fish skin is that it will tend to loose all of its pretty natural coloring once off the fish. One way to get around this with commercially prepared fish leather. The leather IS interesting - but different. It is usually bit thicker than what you would normally think of for fish skin. It is also normally dyed, which means that you can get it in a wide array of colors.
