ROFLMAO, Richard you are working end grain, that needs new techniques. I ruined a quite a few blanks before I got an egg to come out right. Now I use my skew long point down and take light cuts I still get an occasional catch but not as bad as I did with a gouge. My Dad uses a gouge and does just fine. One of the things that helped me was the acrylic bottle stopper video by YoYo spin from the home page. His method of rounding the tops for the bottle stoppers is pretty much how I do the ends of the egg just a slightly different shape. I cut up some 2x4 material and practiced for a while before committing to any hardwood after I trashed a couple nice blanks. The spruce has an even grain and was more forgiving while developing a feel for working with the end grain.
