make the wood weather resistant and provide any kind of UV resistance? I stabilized a beautiful piece of flame box elder and used it it turn one of my hummingbird feeders. It will receive multiple dip coats of an outdoor finish to protect it and provide some UV inhibition but I was wondering if the resin would add to that.

No, stabilizing does not add any UV protection. It will provide moisture resistance but not UV.
