Crawfish etouffee is a cajun dish. Etouffee means to saute. So you saute onions, bellpeppers and garlic in butter. Add the crawfish season to taste add water and corn starch to thicken. Serve over rice.

LOML was born in NO. Her family is from there. I pastored SW of NO for 5 years and LOVED that food! Our biggest 'church' fights was from the men who argued over who was going to make the gumbo for the next fellowship meal. Some liked file' gumbo, some liked okra, some argued over the roux. They taught me to cook chicken sausage gumbo in different ways.
I like Thai food, Indian, Chinese, Japanese, Italian, French, German and ethnic and localized US foods, but the best of all day in and day out is CAJUN! To quote a commercial from Popeye's Fried Chicken about 25 years ago - a young man points to his mouth and says "There is a party going on in there!"
LOML makes the best crawfish soup that I have EVER tasted. Here in Japan, we cannot get crawfish, so we substitute shrimp and or crab. FLAVOR HEAVEN!
